What is phal?

Phali is not a specific dish, but a whole group of dishes of Georgian cuisine, which is distinguished by a variety of options for the ingredients used. This is a kind of appetizer, which is prepared from a base mixed with a dressing.

As a basis, you can take almost anything: beet, any greens, meat or fish, a variety of vegetables, offal and so on. But a special charm is attached to the dressing, which is made from walnuts, cilantro, garlic, onion, hops-suneli and other spices, and sometimes wine vinegar.

How to cook?

Each hostess certainly has her own special recipe for cooking phali in Georgian, and even more than one. Several interesting options are discussed below.

Option first

Prepare useful and tasty phali from beets, which, by the way, normalize digestion.


  • 500 grams of young beets;
  • 100 grams of walnuts;
  • 2 garlic cloves;
  • 1 head of red onion;
  • ½ teaspoon hops-suneli;
  • 1 bundle of cilantro;
  • 1 pinch of ground coriander;
  • 3 tablespoons of white wine vinegar;
  • ½ teaspoon of saffron;
  • salt to taste.


  1. The first thing is to wash the beet well and boil it to the full, then peel and cut into small pieces.
  2. Peel the garlic and chop with a knife or chop it with a garlic press.
  3. Peel onion and cut into half rings.
  4. Wash the cilantro and chop with a knife.
  5. Nuts should be cleaned and chopped.
  6. Now take the blender and chop the beetroot. Then add the nuts, onions, garlic, coriander, all seasonings, wine vinegar and salt and chop all together again, whilst mixing and stirring.
  7. Form the ready-made balls and decorate them with greens.

Variant of the second

Make practically dietary phalis from spinach. To do this you will need:

  • 400 grams of fresh spinach;
  • 50-70 grams of walnuts;
  • 2 garlic cloves;
  • 1 head of onion;
  • a bunch of parsley;
  • a bunch of green cilantro;
  • ½ teaspoon hops-suneli;
  • a pinch of ground black pepper
  • several grains of pomegranate for decoration;
  • salt.

How to prepare:

  1. Wash spinach and boil for a few minutes.
  2. Peel the garlic.
  3. Walnuts also need to be cleaned.
  4. The greens need to be washed and chopped.
  5. Now chop the spinach together with garlic, parsley, cilantro and nuts in a blender or in a meat grinder. Then add seasonings and salt and mix well.
  6. Form from the composition of the cake, decorate them with pomegranate seeds and chopped onion rings.

Option third

Phali can be prepared from beans. To do this, you will need:

  • 400 grams of red beans;
  • 200 grams of walnuts;
  • 3-4 cloves of garlic;
  • 1 bunch of cilantro;
  • 1 grenade;
  • ½ teaspoon hops-suneli;
  • ½ teaspoon ground coriander;
  • pepper and salt to taste;
  • 3-4 tablespoons of wine vinegar.

How to prepare:

  1. Beans must be soaked in the water for the night to make it swell. The next day, boil it to the full.
  2. Garlic must be cleaned and either crushed in garlic crust, or finely-finely chopped with a knife.
  3. Nuts should be chopped. You can do this with a coffee grinder or a knife.
  4. Wash and chop the cilantro.
  5. Now mix beans with wine vinegar and leave it for ten minutes to soak it.
  6. Next, mix the beans with garlic, nuts, pepper, salt, coriander and hops-suneli.
  7. The received weight lay in a hill or divide into portions, decorate with seeds of a pomegranate and submit.

Option Fourth

Probably very tasty and piquant will snack phali from aubergines.

List of necessary ingredients:

  • 3 eggplant;
  • 3 garlic cloves;
  • 100 grams of walnuts;
  • 1 bunch of cilantro;
  • ½ teaspoon coriander;
  • salt to taste;
  • little vegetable oil for lubrication;
  • grains of pomegranate for decoration.


  1. Eggplants need to be washed, oiled and baked in the oven at a temperature of 180 degrees for about 40-50 minutes( until completely ready and soft).
  2. Next, cool the eggplants a little, cut them along in half and take out the pulp.
  3. Cut the cilantro, chop the garlic and chop, nuts also need to be ground.
